Candied Sweet Potatoes

Sweet potatoes are my favorite vegetable. They just have such nostalgic meaning to me. I love baking them with the skin on and just having them on hand during the week for snacking. They always remind me of my grandmother. She would always have baked sweet potatoes on the stove or in the fridge. I loved going to visit her and just walking into her house and smelling them baking.

My grandmother would serve them with butter and sometimes with brown sugar sprinkled on top. During the holidays she always made some form of baked sweet potato goodness. These candied sweet potatoes remind me of her and how she loved sweet potatoes. I am happy to share this yummy recipe with you.

Let’s get started.

INGREDIENTS:

4 Large Sweet Potatoes – peeled and either sliced into 1/2-inch slices or 1-inch cubes
1 C. Sugar
1 Tbsp. Cornstarch
1/2 Tsp. Cinnamon
1 Tsp. vanilla
1/2 Tsp Kosher salt or 1/4 tsp fine salt
1/2 C. Water
1/4 C. Butter

DIRECTIONS:

  1. Preheat the oven to 350* and grease a 9-inch round baking dish or a 9×9-inch square baking dish.
  2. Add the sweet potatoes to the baking dish and set aside.
  3. In a bowl combine the sugar, cornstarch, cinnamon, vanilla, salt, and water. Whisk to combine well.
  4. Pour the mixture over the sweet potatoes evenly. Dot the top of the sweet potatoes with the butter and cover with a lid or foil.
  5. Bake for 30 minutes.
  6. Remove and gently stir the potatoes to make sure all of the potatoes cook evenly.
  7. Place back in the oven uncovered for an additional 20 to 30 minutes or until the potatoes are tender.
  8. Remove and let cool slightly before serving.
  • You can add other spices like cardamom, nutmeg, clove, or allspice to the mix if you like to bump up the flavor. Or add in a bit of pumpkin pie spice if you don’t feel like measuring out different spices. I would use about 1 tsp of pumpkin pie spice.
  • You can double or triple this recipe easily for bigger families or holiday get-togethers. It is always a hit.
  • You can also add 1/2 cup of walnuts or pecans to the mix before the last 30-minute bake time for a nice crunch.
  • Top with a few mini marshmallows for a delectable flavor.
