Garlic Bread Tuna Melts

This is a wonderful spin on the classic tuna sandwich. I love tuna sandwiches, however, I like flavor and texture so I add veggies and top it on garlic bread. It adds tons of flavor to the bread itself. It is a great way to get supper on the table quick if you are in a crunch for time. Add some fries or tots for a filling meal.

This recipe I used to make a lot when I worked at a local restaurant here as a teenager. I’ve made it ever since and it is always a hit in my house.

INGREDIENTS:

Bread slices
Butter (as much as you need to butter the outside of the bread)
2 Cloves garlic – grated
16 Oz. Tuna (in water) drained
1/4 to 1/3 C. Mayo
1/4 C. Celery – finely diced
1/4 C. Onion – finely diced
2 Tsp. Mustard ( I use yellow mustard – any will do)
1/4 C. Tomato – finely diced
1/4 C. Pickles – finely diced
2 Tbsp. Parsley – chopped (1 tsp dried)
Salt and Pepper – to taste
1 C. Cheddar Cheese – grated

DIRECTIONS:

  1. In a small bowl stir together the butter and garlic. Set aside.
  2. In a large bowl stir together the tuna, mayo, celery, onion, mustard, tomato, pickles, parsley, salt, pepper, and cheese. Adjust seasoning.
  3. Butter one side of the bread with the garlic butter and place the buttered side down on a plate or cutting board. Add as much of the tuna mixture to the inside of the bread and top with the other buttered bread with the buttered side up.
  4. Preheat a large skillet over low heat and place the sandwich in the pan. Let the sandwich cook for 2 to 3 minutes or until golden brown. Flip and cook another 2 to 3 minutes or until golden. The cheese should be slightly melted. Remove and serve.
  • If you do not like tuna, try shredded chicken. If there are veggies you do not like or can’t have, remove them and add what you do like and can have.
  • You can also toast these in the oven. Place on a lined sheet tray and bake at 350* for 8 to 12 minutes or until golden brown. Flip and cook for an additional 5 to 8 minutes or until golden brown and the cheese is melted. Remove and serve.
  • If you just want the sandwich, just skip the garlic butter and toasting part, top the bread with the tuna mixture add chips or fries, and call it good. I do this for lunch on occasion. lol.
  • 3 to 5 oz tin of tuna makes about 2 sandwiches. 6 to 7 oz tin of tuna makes about 4 sandwiches. 12 to 16 oz tin of tuna makes about 5 to 6 sandwiches. This also depends on how much of the tuna mixture you add to your sandwiches. Please adjust the amount to feed your family.
