This super easy and quite tasty dessert is something that my aunt made all of the time when I was younger. She would bring it to family gatherings, BBQs, Holidays, and more. It is so good. This is one of those “Don’t knock it till you try it” recipes. It just works.
Let me share with you this wonderful little recipe.
INGREDIENTS:
1 Pkg. Cottage Cheese
1 Small Tub Of Cool Whip
1 Can Fruit Cocktail – drained
1 Small Jar Of Maraschino Cherries – drained and halved
1/2 C. ( or more) Chopped Pecans
1 Reg. Pkg. Strawberry or Cherry Jello
- In a large bowl stir together the cottage cheese, fruit cocktail, cherries, pecans, and jello. Make sure to mix it well.
- Fold in the cool whip until it is well combined. It will be a pretty pink color.
- Spoon the mixture into a bowl and cover with a lid or plastic wrap. Place in the fridge for 2 to 4 hours or overnight. Overnight is better.
- You can use large curd, small curd, or ricotta cheese for this recipe. If you do not like the texture of cottage cheese you can blend it until it is smooth in a blender and add it to the recipe.
- This recipe is easily doubled.
- Don’t knock it till you try it. lol. it’s good.
