Chicken Fajitas

This is our go-to chicken fajita recipe. It is so easy and delicious and it will impress your family. It is a great dinner to make when you have a little time in the kitchen. This is also a dish to impress if you have guests on the way. Double the recipe and plate it up. Serve the tortillas on the side and let your family or guests fix their own fajitas with their desired fillings.

Let’s make some fajitas.

INGREDIENTS:

1/2 Tsp. Paprika
Salt and Pepper
2 Tbsp. Sugar
1/2 Tsp. Dried Oregano
1/2 Tsp. Cayenne Pepper
1 Tsp. Cinnamon
Zest of 2 Limes
Juice of 2 Limes
2 Large Onions, Sliced 1/4-inch thick
3 Bell Peppers – Seeded and sliced 1/4-inch thick
1 Lb. Boneless Skinless Chicken Breast – Sliced 1/4-inch thick
2 Tbsp. Avocado Oil
Flour Tortilla shells

DIRECTIONS:

  1. Cut the chicken into strips and place in a bowl.
  2. To the chicken add the paprika, salt, pepper, sugar, oregano, cayenne pepper, cinnamon, lemon zest, and lemon juice. Toss to coat evenly and cover with plastic wrap and let marinate for 30 minutes.
  3. In the meantime prep your onions, bell peppers, and tortillas. Cut the onions and bell peppers in half then into 1/4-inch thick slices. Place in a bowl or leave on the cutting board.
  4. For the tortillas: Place a lint-free cloth on a plate and char the tortillas. Place the tortillas directly on the gas burner on the stove and let cook for 10 seconds per side or until they are charred to your liking. Remove to the towel-lined plate and cover with the ends of the towel to keep warm. If you want homemade tortillas you can certainly make your own from your favorite tortilla recipe.
  5. Place a large skillet over medium heat and let the skillet get hot. Add the oil and the chicken to the pan and cook for 5 to 6 minutes until golden brown and cooked through. Add the peppers and onions and cook for another 3 to 4 minutes until the onions and peppers are tender and soft.
  6. Remove the mixture to a serving platter.
  7. Assemble as desired.

  • Additions: Salsa, sour cream, guacamole, onions, pickled onions, and any other toppings you like on your fajitas.
  • Serve with your favorite sides. I like to serve ours with refried beans ( see * “Frijoles De Olla” refried bean recipe), salsa rice, lettuce, tomatoes, sour cream, hot sauce, and olives.
  • You don’t have to char the tortillas. I find it gives the fajitas even more flavor. You can wrap them in a damp paper towel and heat them in the microwave for 1 to 2 minutes or place them on a baking sheet and heat them in the oven at 350* for 5 minutes. You can keep them warm as stated above.
  • I also make chicken fajita bowls. I make the chicken mixture as stated above in the recipe and put that in a bowl with some rice. So good. You can add all of your favorite toppings to this as well. Or you can serve the chicken fajita mix on a bed of greens for a nice and hearty salad. We do this also when we want something a bit lighter for dinner.
