
We love steak bites in this house. I think it is one of our go-to meals. It goes with any side dish and it is always a no-fail meal. They are so simple and easy to make and take no time at all. I always have some sort of steak or beef tips in the freezer so I can whip these up in no time.
This recipe is one of my daughters’ favorite steak bite recipes that I make, and I make a lot of variations of them.
INGREDIENTS:
1 Pkg. 2 lb. Beef tips or a roast cut into 2-inch pieces
Olive oil
Salt and Pepper – to taste
2 Tbsp. Southwest Seasoning blend ( I make my own but any brand will do)
2 Cloves Garlic – minced
Zest of 1 Lemon
Juice of 1 Lemon
2 Green Onions – chopped
1/4 C. Parsley – chopped
DIRECTIONS:
- To a medium-sized bowl add the beef, 2 tbsp olive oil, and the southwest seasoning blend. Stir to coat the beef with the spices evenly. Cover and let rest for 30 minutes to 1 hour.
- Preheat a large skillet ( I use cast iron) over medium heat. Add a little bit of oil. Maybe 1 tbsp of olive oil.
- Add some of the beef to the skillet making sure not to overcrowd the pan. You want a nice sear on the meat. Do not stir just let it be and let it cook for 2 minutes or so to develop a nice sear on the meat.
- Using a spatula gently toss the beef around in the pan to sear the other side of the meat for another 2 minutes. If you want it cooked completely cook it longer. Remove the meat to a plate and set aside while you sear the rest of the beef.
- Once all of the beef is cooked how you want it you can place the meat back into the skillet.
- Add the lemon zest, lemon juice, green onions, and parsley to the pan and cook for 1 to 2 minutes to warm the beef back through. Remove from the skillet to a serving platter.
- You can serve these delicious steak bites with any side dish you like. I switch it up every time I make it. Above, I just made a simple sauteed squash and onions as a side. I also had homemade whole wheat bread with a pat of butter. This is just an example. Serve it however you desire.
- Typically I will dice up a beef roast into 2-inch by 2-inch cubes as sometimes beef tips are a little bit too tough. If that is all you have on hand then you can certainly use them. I always have them in the freezer and they work just fine.
- If you do not have time to let the beef rest for 30 minutes to 1 hour then you can get away with letting the beef rest for about 10 minutes.
- Be sure to not overcrowd the pan because if you add too many to the pan they will steam instead of searing. You want a nice outer crust on the beef.
- Serve these tasty steak bites hot right out of the pan.
- You can use any cut of steak/beef that you prefer.
