
This is a recipe that I often make when I have no idea what to make. It is easy, delicious, and very filling. A few simple ingredients and you have a tasty meal on the table in no time. My whole family enjoys them and they make for excellent leftovers.
INGREDIENTS:
1 lb. Ground Beef
1 Onion – diced
1/2 Tsp. Cumin
1/2 Tsp. Oregano – dried
1/2 Tsp Chili Powder
Salt and pepper – to taste
1 (7 oz) can Enchilada Sauce
1 ( 28 0z) can Refried Beans
6 Burrito style tortillas
1 Jar of Tomatillo Salsa
2 C. Cheddar Cheese – grated
DIRECTIONS:
- In a large skillet add the ground beef and the onions and break them apart with your spoon. Season with salt and pepper and cook until the beef is cooked through and the onion is tender. About 10 minutes or so. If you have any excess grease in the pan, drain it off. In the meantime, preheat your oven to 350*.
- Add in the cumin, oregano, chili powder, salt, and pepper. Stir to mix well and cook for 1 to 2 minutes.
- Add in the can of enchilada sauce and stir to combine well. Turn heat to low and cook for about 5 minutes or until thickened. Remove from the heat.
- In the meantime, in a saucepan warm up the can of refried beans. If the beans are too thick for you, you can add 1/4 cup of milk to thin it out. I like to warm it up over medium-low heat until bubbly. At this point, you can add 1 cup of cheddar cheese and stir to melt the cheese. Remove from the heat.
- Lay the tortilla shells out on the counter or you can do them individually. Spoon some of the bean mixture evenly onto each tortilla shell. Spread the mixture out just slightly in the center of the shell.
- Spoon some of the beef mixture evenly onto each tortilla on top of the bean mixture.
- Take two sides (left and right side) of the tortilla shell and fold over the mixture. Then take the end closest to you and fold over the center and roll it up tightly.
- Place the burritos seam side down in a greased 9×13-inch baking dish.
- Pour some of your tomatillo salsa over the top of the burritos. There is no former fashion to this method as long as the top is covered…..mostly.
- Sprinkle over the remaining cheddar cheese on top of the burritos. Place them in the oven to bake for about 20 to 25 minutes or until the cheese is nice and melted and the burritos are warmed through. Remove them from the oven and let them rest for 5 minutes or so before serving.
- You can serve these however you like. I like to serve them with fiesta potatoes, lettuce, cheese sauce, tomatoes, sour cream, and salsa. Add a few dashes of hot sauce for a nice kick of heat.
- You can substitute the beef for ground chicken or ground turkey.
- Use green enchilada sauce for a nice switch of flavors.
- Don’t like tomatillo sauce? no problem. Just use regular salsa.
- You can make these and freeze them individually. Just make them to the point of rolling them up and wrap them in wax paper or parchment. Place them in a zip lock bag and freeze them. Pull them out when you want a quick lunch and either microwave them for a few minutes or bake them in the oven on a baking dish lined with parchment for about 25 minutes or until warmed through. Let cool slightly before serving.
