I love soups. They are so easy to whip together and have a delicious meal. This is one of my more frequent soups that I love to make. It is light, easy, and delicious. The flavor of this soup is unbeatable. So let’s get right to it.
Taco Tortilla Soup
INGREDIENTS
1 tbsp olive oil 1 onion- diced 1 tbsp garlic – minced 1 lb ground beef 3 cups beef broth 15 oz. can tomato sauce 3 1/2 tsp chili powder 2 tsp paprika 1 tsp oregano salt and pepper 1 tsp cumin 1/4 tsp red pepper flakes 1/2 tsp garlic powder 1/2 tsp onion powder 1 tsp parsley 10 oz. can diced tomatoes 10 oz can of rotel or 1 cup salsa 15 oz. can black beans 1 cup corn 2 large or 4 small flour tortillas – cut into strips juice of 1 lime or lemon
DIRECTIONS:
In a large dutch oven over medium heat add the oil and the onion. Cook until tender.
Add the garlic and cook for 30 seconds or until fragrant.
Add the beef and cook until the beef is completely cooked through. About 10 minutes. Drain off any extra fat from the beef and discard the fat.
Add the remaining ingredients except for the lemon/lime juice and tortilla strips. Stir until well combined. Bring to a boil and turn the heat to low and cover with a lid. Simmer for 30 minutes stirring occasionally.
Remove the lid and add the lemon/lime juice along with the tortilla strips and stir. Cook an additional 5 minutes. Check for seasoning and adjust to your liking.
Serve.
